Watermelon Gazpacho is one of the most-wanted recipes in summer time.
Ingredients for making Watermelon Gazpacho

7 cups of seeded and diced watermelon flesh

¾ cups of whole almonds with skins

3 garlic cloves, chopped coarsely

freshly-ground black pepper

8 slices of crust-removed sandwich bread torn into pieces

black pepper, freshly ground

2 tea spoon salt
-
2 table spoon red wine vinegar

¼ cup extra – virgin olive oil

1 ½ cup ice cubes.
Method for making Watermelon Gazpacho.
Use 6 cups of watermelon dices to make a puree in a blender. Strain the puree in a container, discard solids. Blend this juice with ice, almonds and garlic, until smooth. Put bread, salt, pepper and vinegar in the puree and blend.
Slowly pour oil in slow motion while the motor is running, blend to a smooth mixture.
Cool and serve with diced watermelon cubes.
