Ingredients for the Weight Loss Recipe -  Cucumber Yogurt  Cold Soup

  • 2 large cucumbers, peeled and seeded

  • 2 cups of low-fat yogurt, soy yogurt

  • quadrant cup of chopped fresh mint, parsley etc. as per choice

  • Half teaspoon of ground cumin

  • One and half cup of low fat milk / soy milk

  • Lemon juice, one teaspoon

  • Salt and pepper to taste


Method to prepare the Low Fat Cucumber Yogurt  Cold Soup:

Grate the cucumbers, salt it and place it in a colander( a bowl-shaped strainer). Keep the colander above another container, where the cucumber juice will be collected, let it stand for about 30 minutes.

Now, add the cucumbers to the juice with the yogurt, herbs and milk to make it little thick. Add sugar and salt-pepper along with lemon juice(optional) and stir.

Cool and serve.
